The Russian River Valley Winegrowers will host the ultimate winemaker dinner, the Annual Paulée, on August 30 at DeLoach Vineyards, featuring over 30 Russian River Valley Wineries pouring world class Pinot Noir, Chardonnay, Syrah, Zinfandel and Sauvignon Blanc. The Paulée will offer guests an unmatched tasting experience in both wine and food. In the spirit of the Paulée tradition, which originated in Burgundy, the Russian River Valley Paulée brings winemakers and collectors together to enjoy an elegant multi-course meal paired with wines from winemakers and guests’ personal cellars, including special, limited and rare vintages. The intimate feast welcomes guests, winemakers and growers to specialties from renowned local chefs and personalities. The truly engaging dining experience includes family style seating which fosters the spirit of community and an ideal format for the shared love of great wine, great food and celebration of friendship, both new and old. 2019 Paulée Dinner Chefs

Chef Charlie Palmer

Since the beginning of his celebrated career, master Chef, hospitality entrepreneur and hotelier Charlie Palmer has received critical acclaim for his signature Progressive American cooking, a style built on rambunctious flavors and unexpected combinations with a deep and lasting infusion of classical French technique. Charlie Palmer’s upbringing on a farm in upstate New York, along with his education in various kitchens in France and at The Culinary Institute of America, provided him with the acumen to form this unique style and ultimately strike out on his own. In 1988, he made a significant commitment to creating dishes featuring regional American ingredients at his sublime Aureole, originally situated in a historic townhouse off Manhattan’s Madison Avenue and now in a spectacular new location in the heart of New York City’s radiant theater district.

Each plate that Michelin starred Chef Steve Litke creates tells a story about Sonoma County. Its incredible diversity of agriculture and artisan producers, its rich California heritage of Italian, French and Mexican immigrants and its consistent focus on organic and sustainably farmed fruits and vegetables enable our chefs to create delicious, wholesome and intensely flavored dishes that rely entirely on what is seasonal and at its peak. In spring it’s all about local, wild salmon from the Sonoma coast- half an hour away, baby lamb from the farmer up the road, pea shoots from the chef’s garden and fava beans from a Healdsburg neighbor… summer brings its hoards of heirloom tomatoes and herbs from our Bartolomei ranch, down the road and fresh cheeses from the goat dairy a few minutes away. Each season has its own roster of flavors, textures and even colors.

Boisset Collection, Chef Rafael Molina

Executive Chef Rafael Molina, 37, came to work with Boisset about six years ago, attracted to the prospect of cooking for Frenchman Jean-Charles Boisset after mastering the complicated world of cooking French cuisine. He is the mastermind behind all of the various lunches, dinners and special events that happen at the company’s Napa and Sonoma properties as well as catered events in offsite locations. Rafael, “Rafa” to his colleagues and friends, is a self-taught chef who has a special gift for making dishes that are both beautiful and delicious. He has a passion for baking and his favorite breads to make are brioche and French. When not behind the stove, you can find Rafa on the trails or competing in races — either running or cycling!
